  • Ensure that the bag is properly sealed and free of leaks;
  • Label products with the information required for traceability;
  • Follow proper storage temperatures and food handling practices.

It is also important to keep in mind that vacuum packaging is not a sterilization method and is not a substitute for food safety practices. Temperature control, hygiene, proper handling, and compliance with company procedures remain essential.

Before the season begins, take the time to check your vacuum bag inventory: do you have the right sizes and thicknesses for your different cuts? 
While you're at it, take a moment to perform some basic maintenance on your machine. Are the Teflon strips and other components still in good condition? Was the last oil change performed less than a year ago?
